🍽️ The Weeknight Kitchen Dinner Plan #4
The one where it starts to feel like spring
This week’s plan is hitting your inbox a couple of days late — which honestly feels very on-brand for life right now. So if you’re starting your week thinking, “what are we even eating for dinner tonight?!” you’re in the right place.
I’m leaning into spring HARD this week, soaking up the flowers, sunshine, and springy flavors — fresh herbs, crisp veggies, and meals that don’t feel heavy but are still easy and satisfying. Think creamy peanut noodles with veggies, herby salmon, crisp lettuce wraps, citrusy carnitas, and a simple steak night to end the week. This is the time of year when things start to feel a little lighter, brighter, and more fun... that is, until the madness of the end of the school year descends (as it does). But for now, let’s tackle dinner.
